This is a very simple recipe to make, and even though it is fried, you don't need a ton of oil, and only a couple of minutes on each side since the salmon is already cooked, so the burn risk is pretty low. Perfect for beginners!
I usually use canned salmon and just remove the bones. It's really easy to get the flavors right because the salmon is already cooked, so feel free to taste and adjust as you go!
If you want to make the breading even simpler, use fish fry instead of having to season the corn meal!
Add your salmon to a medium sized bowl, and if you're using canned, remove as many bones as possible, and then flake the fish using a fork.
Add your beaten eggs, bread crumbs, onions, and a bit of All Purpose Seasoning and the Old Bay Seasoning to the bowl and mix to combine. Taste a small bite and adjust seasoning as necessary.
Using your hands, form the fish mixture into small patties and set aside.
In a shallow bowl, mix the cornmeal and more All Purpose Seasoning, and/or your fish fry until combined.
Dip each patty into the cornmeal mixture until they are dusted on each side.
Pour enough Vegetable Oil in a pan to give you about ¼ inch depth and heat to medium. Fry patties for about 2 minutes on each side, being careful not to splatter when flipping.
Let drain for a bit on paper towels. Serve hot!
These are great for brunch with eggs and grits, or as you see with dinner with veggies and corn! However you choose to serve it, everyone will thank you!
