This flavorful and colorful dish is great for a pescatarian lifestyle, or if you're looking to add more lean proteins to your diet, or if you just like REALLY good food. You all know how much I love mediterranean spices, and this Atlantic cod is the perfect vehicle for that.
And with it being ready in less than 15 minutes, what is there not to love?
In a small bowl, combine all your spices. Pat your cod dry and season liberally on both sides.
While the cod is sitting, heat 1 tbsp of butter and 1 tbsp of olive oil over medium-high. Add your tomatoes and cook for about 5 minutes until they begin blistering and releasing their juices.
Push the tomatoes to the side of the pan and add your fish, pressing firmly down. Cook for about 2 minutes.
Flip the fish, add the other tbsp of butter and the lemon juice, and baste for 30 second. Cook another 2 minutes.
Garnish with the fresh parsley and serve warm with the extra pan juices!
