Mix all your dry ingredients together in a large bowl. In a separate bowl, mix all your other ingredients EXCEPT the lemon juice.
Mix your wet ingredients into your dry until just incorporated. When you add the lemon juice, the batter will bubble up. This is normal.
FOLD the lemon juice gently until just incorporated. If you over mix it will be TRASH.
Cook over medium-low for about 3-4 minutes on each side but watch carefully.
