However you choose to enjoy this, you will brunch like a true connoisseur with our Creamy Shrimp & Grits—a celebration of flavors that transcends the ordinary.
In a saucepan, bring 4 cups of water to a boil (you can also substitute one cup for milk to make them creamier, but you will have to WATCH the pot to prevent boiling over). Add 1 teaspoon of salt. Slowly whisk in 1 cup of grits, stirring constantly to avoid lumps.
Reduce heat to low, cover, and simmer for about 20-25 minutes, stirring occasionally, until the grits are thick and creamy.
Stir in 1 cup of shredded cheddar cheese until melted and well combined.
Remove from heat, add butter and taste to adjust seasoning as necessary.
Sauté all your veggies in butter over medium heat until soft (about 4-5 minutes), then add garlic and cook for another 30 seconds. Add tomatoes and thyme, stirring to combine.
Add broth and shrimp. Season with all purpose seasoning and cook for 2 minutes. Stir and cook another few minutes until cooked through.
Add heavy cream, stir, and bring to a simmer for a few minutes or until it's thickened to the right consistency.
Serve over your cheesy grits and garnish with parsley!
